Cooking / baking thread!

Cooking may replace music soon as my #1 Passion. I especially love making chinese, italian (including homemade pasta) chili and barbeque.
A couple summers ago I bought a couple new ceramic grill/smokers, called the Big Green Eggs. You can smoke a butt @ 220F for 24 hours, or bring it up to 900 for neapolitan-style pizzas or REAL stir-frying!

All of that looks amazing! :thumbup:

(the batter is made with beer.. and wrong as it may sound, I used the remainder to wash down the waffles :D )

Looked at the pic before reading and I was like.. Waffles.. And ... Beer?? Lol looks delicious tho!

Driving to Daytona tomorrow (1000 miles). Made my favorite (and easiest to consume) snack for the road: cashew biscotti

Anything that I killed! Especially deer, I don't do it very often but there's a "thing" called a "Fatty" and its awesome. Basically you take a whole lot of bacon, and weave it together to make a solid sheet of bacon, then take your ground venison, or beef, turkey whatever you want and spread it out into one big patty on top of the bacon, then you put what ever you want on top of the ground, normally ill do a bunch of bell peppers, cow horn peppers and some other veggies, add some cheese and any seasonings, roll it all up and throw it on the grill. They don't call it a fatty for nothing but its damn good. Kind of like meatloaf on steroids! I did a "Italian" one a while back and it turned out awesome too. Instead of bacon I used prosciutto, put some basil in, mozzarella, provolone, pretty much a lasagna log lol

*a fatty is also known as the bacon explosion

Homemade fresh Salsa

Yakitori (japanese grilled chicken kabobs)

Barbecue Glazed Chicken in my own secret wet marinade

Bourbon Chicken (this one is a F-PITA to make and takes for-eh-ver)

Cajun Pierogies

Potato, Salsa ( ^ ), Jalepeño, Egg, and Cheese Breakfast Burritos

Baked Pepperoni and Cheese Pasta (its kinda like lasagna but not really)

and PIZZA BAGELS (i make 'em myself not the bagel bites crap)
 
Grilled steak with boiled red potatoes and beans and/or salad. One of my wife and my favorite meals since her folks have a beef farm and we buy 400 lbs of beef off of them every year @ $2/lb. :thumbup:

Also a big fan of venison chili with homegrown hot peppers! For the last 3 years in a row I have harvested 3 deer each year so we have had venison at least every other week. :rockon:

I will be making this on Sunday for St. Patty's day!

Corned beef roasted with potatoes, carrots, onion and cabbage thrown in with 30 minutes left in cooking time.

When I had land, I love to BBQ Turkey! Clean it, no stuffing, poke holes in and shove some fresh Rosemary into it.

On a round Weber BBQ get the coals going and fan them out to the perimiter. Place an aluminum pan in the middle to catch the dripping and keep it hydrated. Add briqquets around the edge every 20 minutes. Its not rocket science and figure a 15lb bird will take about 2.5 hours. Its Yummy! Also - you can season and/or beer the pan too.

2 - 3 mango's
1-1/2 large sweet onion (or more)
2+ jalapeno's (to taste)
1 Anaheim pepper
1 pasillo pepper
1/2 bunch cilantro
2 cans crushed pineapples
1 lime into 1/8's and squeezed into mix
1 - 2 orange/yellow bell peppers (optional)
Salt to taste, essential
Let stand overnight in fridge

Good with fish on bed rice or just chip dipp’n...

I help run a paleo (caveman style) food blog, Modern Paleo Warfare (nsfw language). My friend writes most of it, I do the odd recipe and help with the photography.

Well the girls decided to help out today, we had been given some chocolate shavings so the women of the house made some peanut/cornflake chocolate cookies (well more correctly blocks ;))

Recipe:
Chocolate
Peanuts (unsalted)

blitz peanuts in food processor, melt chocolate, mix, put in cake forms, leave to set in fridge. Very difficult ;)
They also made a few with cornflakes. mmmmm...

First batch is stuffed with cabbage:
