Should there be any play in the gas tank?

I noticed while filling my gas tank that there's a slight amount of left/right play..

If you're sitting on the bike, that means it will lean very slightly to the left or the right if pressure is applied, as if it's pivoting along the attachment points on the front and back. The amount of movement is very small but noticeable.

Is this how it's supposed to be, or is it supposed to be rock-solid and attached to the frame without any movement at all?

The mounts in the front and back are rubber mounted to minimize vibration of the tank so there will be slight play but it should definitely not rattle or move while riding. Check the rear pivot bolt under the seat and there are 2 Allen head bolts on the front of the tank that connect it to the frame just behind the steering head.

In addition to the above, the bracket that bolts to the front of the tank bolts to the tank. You'll have to raise the tank to check if those are tight.
